International trade of food products is increasing. This means that food produced in one country may use ingredients sourced from other countries, which can make it difficult to assess the product’s real environmental impact. Interested consumers may already make some effort to work out food miles, but simple to use ecological footprint measure would allow greater tracing and who knows it might increase the number of people making low impact food choices. I would like to see not only mandatory eco-footprinting of food being put with the nutrition labels, but more thorough testing for mercury, hormones, insecticide/herbicides, and other toxic metals and compounds. Not enough fish a true labeled for mercury content, for example. Much of the food coming from China or Mexico could contain contaminants we now know nothing about. Sure, it is recommended to wash the fruit and vegetables, and limit fish intake. How much mercury is in various salmon? How about chemicals in foreign canned goods???
We need that, AND the eco-footprint in units of carbon from transport AND fertilizers and processing. With all products, not just food. If it is too high, they should be stopped from being imported.
Money strapped consumers who don't understand or care about the eco-footprint will buy the cheapest products and food. They will not do the intelligent thing, or the moral thing.

BUT, to be fair---money strapped consumers who DO understand and care about the eco-footprint WILL consider it and not necessarily buy the cheapest product and food. They WILL do the intelligent and moral thing.
I do agree that the effort needs to be wider, with educational efforts, and profiteering restrictions on green products. \:D/ :mrgreen: =D>
Also, in the so-called footprinting orgs, they have to also include this:
"Research from Murtaugh and Schlax at Oregon State University shows that a hypothetical American woman who switches to a more fuel-efficient car, drives less, recycles, installs more efficient light bulbs, and replaces her refrigerator and windows with energy-saving models, would increase her carbon legacy by 40 times if she has two children."

I read another recently that gives the multiplier for kids at about 7 for each, for eco-footprint. Progress is being made, but not rapidly, as the obesity rate goes up past 30% expanding around the world. Get rid of the poisons, and added sugars, and GMOs.

A whole new way of education needs to begin that incorporates the eco footprint of food. There is so much ignorance, myself often included, about what is healthy Vs what is good for the environment. Vegans think they have a better footprint than meat eaters, but some live on soy, corn, wheat etc, which is largely GM.

I would love to see this type of food labelling. I like to see local items of veg in the supermarket too, proves it can be done.
